Audencia and Sodexo investigate sustainable food in institutional catering
35 people were interviewed in individual and group sessions at three company restaurants in the Nantes region: customers, diners, and kitchen teams. The goal? Analysing the eating behaviours of diners at their place of work as a way of finding out how Sodexo’s responsible commitments are perceived with a view to optimising communications for greater efficiency and transparency.
The study reveals that sustainable food remains a vague concept for the diners questioned. Diners are more interested in flavour, the pleasure of eating, and value for money than ecological concerns. Paradoxically, some diners practise “sustainable” eating at home, without actually being mindful of the issue at work, where they become more passive consumers.
Sustainable food makes sense in institutional workplace catering if it seems consistent with the company’s CSR stance, and if internal communications avoid exhorting diners to “eat sustainably”. The challenge therefore hinges on creating meaning around food in institutional catering, and giving diners the same role as active consumers that they have in the private sphere.

Change for Good
The Eram group has launched Change for Good, an ambitious, socially committed business project to lead sustainable and responsible transformation across all the group’s brands.
This reinventing of methods to achieve sustainable growth will take place by incorporating the group’s ecosystem and stakeholders. This is why, in October 2018, Eram launched a call for applications. The group is offering the companies selected a place in Sixième Ciel, a new 300 m² coworking space on the Île de Nantes. Here, alongside the ten Eram group brands, the companies will have the opportunity to explore three strategic areas:
- Eco-design: new materials, packaging, transformation processes, measuring environmental impact (LCA), recycling and end-of-life, etc.
- Production: traceability and transparency, efficient planning and use of resources, production on-demand, etc.
- Responsible trade: new practices, new departments, accessibility, energy, waste management, etc.
On 12 December 2018, the eight candidates selected pitched their projects before a jury including André Sobczak, academic and research director, as part of the partnership between the Eram group and the Audencia CSR Chair. Three start-ups were successful. They will work with Eram on projects relating to supply chain transparency, and circular and reused packaging.

KPMG renews its support for the CSR Chair
For many years now, KPMG has been committed to CSR, and as a significant patron of Audencia’s CSR Chair, it has renewed its support for a further 4 years. Together with the CSR Chair, KPMG hopes to develop teaching projects and research seeking to harness social and environmental responsibility to boost innovation and performance.
The group is currently involved in three main areas: developing the talents of its employees; citizen-based actions; and a strong environmental policy. An example is the programme of worldwide initiatives introduced in order to significantly reduce the environmental impact of the firm. Since 2017, it has achieved a 35% reduction in greenhouse gas emissions.
The CSR Chair enables the group to develop ideas, thanks to inspiration from other company practices analysed by the teaching and research staff, as well as to experiment with responsible innovations by mobilising the School’s students. In concrete terms, in the coming months and in line with the socially innovative Negotraining provision, teams will be working on a national research project which is a first ever in terms of gender equality.

Atelier Bocage, a groundbreaking shoe rental service
In early October 2018, Bocage, part of the Eram Group, launched a rental service for their 100% French-made shoes: Atelier Bocage. This is a pilot scheme for customers available in six stores in France. A monthly subscription gives the option of changing shoes every two months, as well as benefiting from a personal stylist. The shoes will then be repaired and reconditioned in Eram’s historic Montjean-sur-Loire factory, with the aim of creating a second-hand channel which is fully renewable and circular. The goal: reducing production and limiting overconsumption by encouraging customers to favour wearing shoes over owning them.
As part of its partnership with the Eram group, in 2019 the CSR Chair team will launch a study to monitor the customers who have signed up, and will question them at various stages of this unprecedented pilot scheme.
